Ingredients

  • 1 cup sugar
  • 1/2 cup oil (vegetable or canola)
  • 1 cup mashed ripe bananas (use fork)
  • 1/2 cup plain non-fat sour cream
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup frozen blueberries (Unthawed)

Preparation

Step 1

• Preheat oven to 350 degrees. Grease and flour bottoms of muffin pans. You may also use paper liners.

• In a large bowl, beat together the sugar and oil. (Use spatula)

• Add bananas, sour cream, vanilla and eggs. Blend well.

• Lightly spoon flour into a measuring cup; level off.

• In a small mixing bowl, stir together flour, baking soda and salt.

• Add flour mixture to banana mixture and stir just until ingredients are blended. (Make sure not to over mix. I would do this step with a large spoon and only mix until everything is wet. It will be lumpy).

• Fold in blueberries.

• Spoon into muffin pans.

• Bake at 350 degrees for 25-30 minutes in center of oven.

• Optional: Sprinkle with sugar the last 5 minutes of baking.
