Ingredients
- Cake:
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1 cup oil
- 2 cups sugar
- 4 eggs
- 3 cups grated raw carrots
- 1 cup walnuts or raisins
- Frosting:
- 1 8-oz pkg cream cheese
- 3 tbsp oil
- 3 1/2 cups icing sugar
- 1/4 cup salt

Preparation
Step 1
Add sugar to oil beating after each addition. Beat eggs until light. Gradually beat the eggs into the oil/sugar mixture; continue beating until smooth. Gradually stir in sifted dry ingredients until thoroughly combined. Add carrots and nuts. Bake at 350 degrees for 60-65 minutes or until golden brown and set in the middle. Frost when cooled.
Frosting:
Beat the cream cheese until smooth. Gradually blend in the oil. Add icing sugar and salt beating until smooth. Spread on cooled cake.
