- 6 large eggs yolks
- 1/4 c. sugar
- 1 1/2 c. espresso
- 1/2 c.dark rum
- 16 oz mascarpone
- 30 lady fingers
- Dark chocolate shavings

Step 1
Grease a 15- by 10- by 1-inch pan with butter. Line with parchment paper and grease with butter again. Preheat the oven to 350 degrees.
With an electric mixer, beat the yolks and sugar with an electric mixer until thick and lemon colored, 3 to 4 minutes. lower speed and beat in 1/4 c rum, 1/4 c. espresso and mascarpone.
Combine remaining 1/3 c. rum and 1 1/4 c. espresso in a shallow bowl. Dip 1 side of each ladyfinger. Line bottom of pan. Spread cream evenly into the ladyfingers. Continue to layer. Bake for 20 to 25 minutes until the top springs back when pressed lightly. Let cool.
