Almond Shortbread

Ingredients
- 1 c. butter, room temp
- 7 oz almond paste
- 1/2 c. sugar
- 1/4 tsp vanilla
- 2 c. flour
- 2 Tb milk (optional)

Preparation
Step 1
Preheat oven to 325.
With electric mixer, beat butter on high for about 3 mins or until very soft and light. Add paste and sugar, mix on low until combined. Turn mixer on high and beat 5 mins more or until almost white in color and fluffy. Add vanilla.
Gently stir in flour until just combined. Spoon half dough onto a 15 inch long piece of wax paper. Top with another sheet of wax paper. If going to use cookie cutters..lightly smooth top with rolling pin. If going to roll in a log. cool 5 mins, then gently shape into log. Repeat with other half of dough.
Chill an hour or until firm. Work with one piece of dough at a time. Cut out cookie shapes or slice into rounds. About 1/4 inch thick.
Line sheet with parchment paper. Brush tops with milk or just bake.
Bake 12-14 mins or until cookies are firm and bottoms are light golden. Cool on wire rack
