Dad's Ginger Fluff Sponge Cake

Ingredients
- 4 eggs separated
- 3/4 cup caster sugar
- 3/4 cup cornflour
- 1/2 teaspoon cinnamon
- 2 heaped teaspoons ginger
- 1 heaped teaspoon cocoa
- 1 level teaspoon cream of tartar
- 1/2 level teaspoon bicarb soda
- 1 desert spoon golden syrup

Preparation
Step 1
Preheat oven to 200 degrees Celsius
Grease a paper lined cake tins
Sift dry ingredients into a bowl once.
eat egg whites and a pinch of salt.until very fluffy. Add egg yolks one at a time.add golden syrup. Sift in dry ingredients and fold through egg mixture with a spoon that has a hole in it.Lift the spoon out of bowl as you mix it in this allows air to get into sponge mix.
Pour equal amounts into your 2 cake tins and bake in oven for about 20 mins or until it springs back when lightly touched on the top.
Allow cakes to cool,remove from tins. Spread some whipped cream on the top of one and place the other cake on the top of that. Sprinkle the top with sifted icing sugar.
