Serve these mini coffee cake bites for brunch or school lunch—they look beautiful on a plate of china and tote well in a plastic container. How’s that for versatile?
Add a teaspoon of cinnamon to the batter for an extra bit of spice in each bite!
If you don’t have enough pans to bake all 36 coffee cakes at once, refrigerate the remaining batter until ready to bake, and cool the pan 15 minutes before reusing.

- Coffee Cake
- 2 cups Original Bisquick mix
- 2/3 cup milk
- 1 egg
- 2 tablespoons granulated sugar
- Topping
- 1/3 cup Original Bisquick mix
- 1/3 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons cold butter

Preparation
Step 1
1. Heat oven to 400°F. Spray 36 mini muffin cups with baking spray with flour.
2. In medium bowl, stir together 2 cups Bisquick mix, the milk, egg and granulated sugar until well blended. Divide batter evenly among muffin cups.
3. In small bowl, mix all topping ingredients with fork until crumbly. Sprinkle topping over batter in each cup.
4. Bake 9 to 12 minutes or just until tops spring back when lightly touched. Remove from pans to cooling racks. Serve warm or cool.
