Ingredients
- 1 Cup rice
- 2 Cups Water
- 3 Eggs-separated
- 1 Cup Sugar
- 4 Cups milk
- 1 tsp vanilla
- 1 Tablespoon Orange Zest

Preparation
Step 1
Simmer rice and water until all water is absorbed
Mix yolks and sugar. Add about 1/2 cup milk to make it soupy.
Add milk to rice and stir constantly. Pour in yolk mixture in a steady, slow stream.
Simmer stirring frequently. Turn off heat with thickened.
Stir in vanilla and zest when cooled.
Beat egg whites until stiff. Fold into cooled pudding.
