GRILLED SALMON STEAKS WITH LEMON-DILL SAUCE

Ingredients
- LEMON-DILL SAUCE
- 1 1/2 Tbsps butter
- 1 1/2 tsps cornstarch
- 1/2 cup cold water
- 1/3 cup freshly squeezed lemon juice
- 1 Tbsp snipped fresh dill
- 1/4 tsp salt
- 1/8 tsp dried chervil leaves
- Dash cayenne pepper
- 3 thin slices lemon, unpeeled, cut in quarters
- 4 center-cut salmon steaks; about 3/4 inch to 1 inch thick
- 2 whole lemons
- Dill sprigs (optional)

In a small saucepan, melt butter over moderately high heat; remove from heat.
Combine cornstarch with water; stir into butter in saucepan.
Add lemon juice, dill, salt, chervil and cayenne pepper; stir to blend
Bring sauce to boiling over moderate heat, stirring constantly. Cook until sauce thickens and turns clear. Remove from heat and add lemon quarters. Cover and set aside. Makes about 2/3 cup lemon-dill sauce.
For best flavor, buy the salmon steaks the day you plan to cook them. Cut off and discard ends of whole lemons. Cut each lemon into two 1-inch-thick slices. Put one slice into the opening of each salmon steak; using two or three wooden picks, secure salmon steak to lemon slice.
Cook on hot grill 10 to 15 minutes, turning once, until fish flakes easily when tested with a fork.
Remove salmon steaks from grill and place on a heated serving platter. Garnish salmon steaks with fresh dill sprigs. If desired, spoon some of the hot lemon-[dill sauce over each salmon steak. Serve remaining sauce separately.
