  • 3 cloves garlic
  • 1 12 Tablespoons salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon tumeric
  • 1/2 teaspoon thyme
  • 12 teaspoon pepper

Preparation

Step 1

Smear with oil then rub sides of 7 pound roast with paste made by mashing the above in a food processor. Cover with foil and refrigerate the night before. Remove from the refrigerator and bring to room temperature (one hour or more).

Sear at 450 for 30 minutes (no foil). Reduce heat to 325 1 hour and 15 minutes more. Cook to 120 for medium rare. (my oven takes longer)
