  • 1-1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1-1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup raisins (optional)
  • Sift dry ingredients together.
  • 1 cup white sugar
  • 2 eggs, beaten
  • 2/3 cup salad oil
  • 1 cup grated carrots
  • 1 tsp vanilla
  • 1/2 cup crushed pineapple with juice
