Ingredients

  • Cake
  • 1/2 C sugar
  • 1 C water
  • 4 oz unsweetened chocolate
  • 1 1/2 t vanilla
  • 3 C flour
  • 4 1/2 t baking powder
  • 3/4 t salt
  • 2 sticks butter
  • 1 3/4 C sugar
  • 4 eggs
  • 3/4 C whole milk.
  • Frosting
  • 3 eggs whites
  • 3 C sugar
  • 3/4 C water
  • 2 T white corn syrup
  • 3/4 t white vinegar
  • 1 1/2 t vanilla

Preparation

Step 1

Cake:
Place sugar, water, chocolate and vanilla over medium heat - stir until melted. Let cool

Sift together flour, baking powder and salt.

Cream together butter and sugar. Add eggs 1 at a time.
Add chocolate mixture.

Place mixer on lowest setting. Alternate adding flour and milk. Start with 1/3 flour mixture, 1/2 the milk, 1/3 flour mixture, rest of milk and then rest of flour mixture.

Spray 3 cake pans, add parchment paper and spray pans again.
divide into 3 cake pans.

Cook for 35 minutes at 350. Cake will pull away from sides when done.


Frosting:
Whip 3 eggs whites and a pinch of salt - stop before stiff peaks

Place sugar, water, corn syrup and vinegar in sauce pan over medium heat. Stir until melted. Bring to 265 degrees.

Add 30 mini marshmallows or 3 large marshmallows, stir (will foam up)until melted.

Pour into egg whites while on lowest speed. Add 1 1/2 t vanilla. Whip until smooth and glossy.

Add a little frosting between each layer. frost top and sides. Frosting will set
