Ingredients

  • Seasonings:
  • 2 lbs chicken thigh (boneless)
  • 2 stalks scallion
  • 2 gingers
  • 2/3 cup sweet potato powder
  • (a) 1 tablespoon rice wine, 1/2 teaspoon salt, 1/2 teaspoon “HON-DASHI”, 2 egg yolks
  • (b) 1/2 teaspoon five spice powder, 1/2 teaspoon white pepper, 2/3 teaspoon salt, 1 teaspoon garlic powder

Preparation

Step 1

1. Cut the thigh into 1” cubes. Marinated with scallion, ginger and seasoning (1) for 20 minutes.
2. Coat the chicken with sweet potato powder tightly, deep-fry with 400F oil till crispy and golden brown.
3. Heat 1teaspoon oil in a wok, stir the crispy chicken with seasoning (2) over high heat, and mix thoroughly. Serve.
