Confetti Slaw with Spicy Peanut Dressing

Ingredients
- 1 lb cabbage, shredded fine
- 1 tsp salt, plus more to taste
- 2 tbls smooth peanut butter
- 2 tbls peanut oil
- 2 tbls rice wine vinegar
- 1 tbls soy sauce
- 1 tsp honey
- 2 med. coarsely chopped garlic cloves
- 1 - 1 1/2 " piece of ginger
- 1/2 jalapeno chili, seeded
- 1 large carrot grated
- 4 med scallions, sliced thin

Preparation
Step 1
Toss cabbage and carrot with 1 tsp salt in colander and set aside until cabbage wilts (1-4 hours). Rinse cabbage in cold water and press, but don't squeeze.
In bowl of food processor puree peanut butter, oil, vinegar, soy sauce, honey, garlic, ginger and jalapeno until a paste forms.
Toss cabbage mixture with scallions and dressing. Season to taste with salt and pepper.
