Ingredients

  • 1 lb cabbage, shredded fine
  • 1 tsp salt, plus more to taste
  • 2 tbls smooth peanut butter
  • 2 tbls peanut oil
  • 2 tbls rice wine vinegar
  • 1 tbls soy sauce
  • 1 tsp honey
  • 2 med. coarsely chopped garlic cloves
  • 1 - 1 1/2 " piece of ginger
  • 1/2 jalapeno chili, seeded
  • 1 large carrot grated
  • 4 med scallions, sliced thin

Preparation

Step 1

Toss cabbage and carrot with 1 tsp salt in colander and set aside until cabbage wilts (1-4 hours). Rinse cabbage in cold water and press, but don't squeeze.

In bowl of food processor puree peanut butter, oil, vinegar, soy sauce, honey, garlic, ginger and jalapeno until a paste forms.

Toss cabbage mixture with scallions and dressing. Season to taste with salt and pepper.
