  • 3 roma tomatoes
  • 4 oz fresh mozzarella cheese
  • 1 tbsp olive oil
  • 1/4 tsp dried oregano
  • balsamic vinaigrette reduction for glaze

Preparation

Step 1

Slice the tomatoes in half, lengthwise. Trim the bottom of the tomato halves so they will sit on a plate without tipping.

Cut a small notch out of the stem end of each tomato half to remove any green. Set aside.

Slice the mozzarella cheese into 3/8 inch slices.

Heat the olive oil in a frying pan over medium heat.

Place the tomato haves sliced side down in the heated olive oil. Reduce the heat to medium-low. Cook for 1 1/2 minutes.

Turn the tomato halves right side up. Sprinkle a pinch of the dried oregano over each half. Cover each tomato with a slice of cheese. Place a lid on the frying pan. Cook for 3 to 4 minutes or until the cheese is melted.

Place tomatoes on a serving dish and generously trickle the balsamic vinaigrette reduction over each tomato half. Serve while still warm

This can also be prepared in a toaster oven or under a broiler.
