Mediterranean Four Bean Salad

Ingredients
- 1 cup finely chopped parsley
- 1 cup thinly sliced green onions
- 2 Tablespoons finely chopped fresh mint
- 1/2 cup finely chopped red onion
- 1 can each (15 ounce) Kidney beans, pinot beans, and black beans- drained and rinsed
- 2 cloves garlic minced
- 1/3 cup fresh lemon juice
- 1 1/2 Tablespoons olive oil (I omit)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup diced Roma tomatoes

Preparation
Step 1
Combine first 9 ingredients in large bowl; toss gently,. Combine lemon juice, oil, salt and pepper in a small bowl; stir well. Pour mixture over beans; toss well. Cover and chill
I add 1 can pickled beets, cut up and slices olives. Serve tossed with lettuce leaves and a little creamy salad dressing.
If you don't rinse off the beans you don't need the olive oil
