Ingredients

  • 1 1/2 cup corn
  • 1 pound tomatoes (2-3) seeded and chopped or grape tomatoes cut in half
  • 2 cans black beans drained and rinsed
  • 3 Tablespoons chopped scallion
  • 2 Tablespoons caned chopped green chilies
  • 2 Tablespoons fresh lime juice (2-3 Tablespoons)
  • 1 Tablespoon chopped cilantro
  • 1/4 teaspoon salt or to taste (or seasoning salt)
  • 1 clove garlic pressed (2-3 cloves-better)
  • optional diced red pepper

Mix all ingredients together. Chill at least 30 minutes. Can garnish with Bleu Cheese Salad Dressing
