Ingredients

  • 2 Pounds lean ground beef
  • 2 (46 ounce) cans tomato juice
  • 4 cubed potatoes (I omit)
  • 1 large (24 ounce) frozen mixed vegetables
  • 1 (30 ounce) can green beans
  • 3 carrots sliced
  • 1 large onion diced
  • 3 stalks celery cut up
  • salt
  • fresh ground pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon thyme
  • 1/4 teaspoon marjoram
  • 3-4 beef bouillon cubes

Preparation

Step 1

Brown beef in large soup kettle and add the rest of the ingredients and one tomato juice can of water. Simmer until vegetables are tender. Let cool and remove all fat from top of soup. Before serving add freshly grated parmesan cheese. I add a few cups of cooked shell pasta.
