Ingredients
- 1 Tablespoon chopped fresh cilantro
- 1 cup Blue Diamond Natural Almonds
- (or Roasted Salted work fine)
- 1/4 cup + 1 Tablespoon Extra Light Olive Oil divided
- 1/4 cup mayonnaise
- 2 Tablespoons lime juice
- 1/2 tsp salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon sugar
- 1/4 teaspoon cumin
- 1 - 2 pounds small red new potatoes-steamed &sliced
- 1/2 cup sliced scallions
- 1/2 cup julienned red bell pepper
- 1/2 cup julienned celery

Step 1
Saute almonds in 1 Tablespoon oil until crisp. Add salt, cumin, sugar, white pepper and lime juice together mix gradually. Best in 1/4 cup oil. Gently toss. Fold in green onions, bell pepper, celery, cilantro. Chill. Just before serving fold in almonds.
