Butter Meltaways

Ingredients
- 1 cup butter, softened
- 1/3 cup, plus 3 cups sifted Confectioners' sugar
- 1 1/4 cups all-purpose flour
- 3/4 cup cornstarch
- 2 1/2 tablespoons lemon juice
- 2 tablespoons milk
- 1 drop of red or yellow liquid food color (optional)

Preparation
Step 1
Beat butter at medium speed with electric beater until creamy; gradually add 1/3 cup Confectioners' sugar, beating well. Combine four and cornstarch; gradually add to butter mixture, beating just until blended. Chill dough. Shape into 2 (6-inch) logs; wrap in wax paper dusted with powdered sugar. Chill at least 4 hours.
Preheat oven to 350 degrees. Unwrap dough. Cut each log into 18 slices; place slices 2 inches apart on greased cookie sheets. Bake 8 minutes. Transfer to wire racks to cool completely.
Meanwhile, combine 3 cups Confectioners' sugar, lemon juice, milk and food color; stir well. Spread cooled cookies with Lemon Frosting.
