Ingredients

  • 2 1/2 c. unbleached flour
  • 3 tsp. cream of tartar
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 1/2 tsp. cinnamon
  • 1 c. coconut oil
  • 1 c. sugar
  • 1 c. brown sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/2 c. turbinado sugar

Step 1

Preheat oven to 325. Grease a half-sheet baking pan or spray with bakers release. Whisk or sift together flour, cream of tartar, baking soda, salt and cinnamon in a bowl, set aside. Beat coconut oil, sugar and vanilla in large bowl until creamy and fluffy. Add eggs, one at a time, beating well after each. Gradually mix in flour mixture until completely incorporated. Spread in prepared pan and sprinkle top with cinnamon & turbinado sugar. Bake for about 27-30 minutes or until the center is set. Cool in pan on wire rack.
