Ingredients

  • 2 cans black-eyed peas (15 ounce) -- drained
  • 8 each scallions -- chopped
  • 1 each green pepper -- finely diced
  • 1 each red bell pepper -- finely diced
  • 1 large tomato -- cored and diced
  • 1/4 cup cliantro -- chopped
  • 1 bottle spicy Italian salad dressing (16 oz)

Preparation

Step 1


Drain two 15 ounce cans of black-eyed peas well, discarding the liquid,
and transfer peas to a large bowl. Add 8 chopped trimmed scallions, 1
finely diced seeded green bell pepper, 1 finely diced seeded red bell pepper, 1 large diced cored tomato, 1/4 cup chopped cilantro, and one 16 ounce bottle of spicy Italian salad dressing and toss to combine. Cover with plastic wrap and refrigerate for 3 hours or overnight, to allow the flavors to come together. Serve cold or at room temperature. Makes 8
