Ingredients

  • 1 1/4 C whole wheat flour
  • 1/2 C all-purpose flour
  • 3/4 C packed brown sugar
  • 2 T ground flax seed
  • 1 1/2 T dark cocoa powder
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 2/3 C semi-sweet chocolate chips
  • 6 oz. vanilla yogurt
  • 2 medium over-ripe bananas, mashed
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 T oil
  • 1/4 C milk
  • 1/3 C smooth peanut butter
  • 2 T wheat germ

Preparation

Step 1

Preheat oven to 350°. Grease stoneware muffin pan and set aside.

Whisk together flours, brown sugar, flax seed, cocoa powder, baking soda, salt and chocolate chips until combined.

Combine yogurt, bananas, egg, vanilla, oil, peanut butter & milk in a separate bowl until thoroughly mixed.

Fold the banana mixture into the dry mixture just until combined. Fill the cups 3/4 full with batter. Sprinkle tops with wheat germ.

Bake 20 minutes or until set.
