Twice Baked Potatoes

Ingredients
- 3 large baking potatoes
- 1 cup sour cream
- 1/2 cup grated American cheese
- 1 tablespoon butter
- 1/2 small onion, grated
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon garlic salt
- Salt and pepper to taste
- Paprika
- 3 slices bacon, cooked till crispy and crumbled

Preparation
Step 1
Bake potaotes until soft. Remove from oven. Beat remaining ingredients except paprika with electric mixer. Cut warm potatoes in half lengthwise and scoop pulp from shells with a small spoon Add to sour cream mixture and beat throughly. Add bacon. Spoon back into shells and sprinkle with paprika. Bake at 350 degrees for 20 minutes.
Note: The potatoes may be prepared the day ahead and refrigerated.
