Ingredients

  • 3/4 cup 170 g (6 oz) butter or vegetable margarine
  • 3/4 cup (150 g) Barbados (brown) or molasses sugar
  • 1 1/2 cups (175 g) 6 oz wholemeal (whole grain) flour
  • 7.5 ml (1 1/2 tsp) baking powder
  • 3 eggs, beaten
  • butter or margarine for greasing
  • 20 cm (8 in) cake tin (cake pan)

Preparation

Step 1

1. Heat the oven to gas mark 4/180‚°C (350‚°F).

2. Beat the butter or margarine until it is light and fluffy and beat in the sugar.

3. Mix the flour with the baking powder and beat it into the butter alternately with the eggs.

4. Put the mixture into a greased 20 cm (8 in) prepared cake tin (pan) and bake it for 40 minutes.

5. Turn the cake onto a wire rack to cool
