Ingredients
- 1 (14-ounce) can artichoke hearts, drained and halved
- 1/4 cup extra virgin olive oil
- 1/4 cup rice vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 18 large mushrooms, stems removed

Preparation
Step 1
Marinate artichoke hearts in oil, vinegar, salt and pepper for 30 minutes, or overnight.
Preheat grill to medium. Stuff each mushroom cap with artichoke hearts; reserve remaining marinade. Brush mushrooms with some of the marinade and arrange on the grill, stuffed side up. Grill, basting with more marinade from time to time, until tender and hot throughout, 8 to 10 minutes. Transfer to a platter and serve.
