Toffee Blondies

- 2 3/4 c. unbleached flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 c. coconut oil
- 1/4 c. browned butter
- 2 c. packed dark brown sugar
- 1/2 c. granulated sugar
- 3 large eggs
- 2 1/2 tsp. vanilla
- 1 c. cracked toffee bits
- 1 1/2 c. powdered sugar
- 1 tbs. browned butter
- 1/2 c. cracked toffee bits

Step 1
Preheat oven to 350 degrees. Spray half sheet pan with bakers release spray or grease very well with butter or coconut oil. In a bowl whisk together flour, baking powder, and salt. With an electric mixer or whisk cream together coco oil, brown butter and both sugars. Add vanilla and eggs and beat on medium-high speed until light and fluffy, about 3 minutes. Using a spoon or spatula fold in flour mixture and mix until just combined. Add in toffee bits and mix until combined. Spread into prepared pan. Bake about 25-30 until middle is set, being careful not to over bake. While still warm prepare a glaze with browned butter, powdered sugar, and enough hot water for a thick drizzling consistency. Glaze and sprinkle with reserved toffee bits.
