Shrimp with Carrot Slaw

Ingredients
- 4 T. lime juice
- Kosher salt
- 1 1/2 lbs. peeled and deveined large shrimp
- 1/4 c. sour cream
- 1/4 tsp. cayenne pepper
- 1/2 lb. carrots, coarsley grated
- 1 granny smith apple, coarsley grated
- 1 c. chopped fresh cilantro

Preparation
Step 1
Fill a large pot with 8 c. cold water. Add 3 T. of the lime juice and 2 T. salts and bring to a boil. Add the shrimp and cook until opaque throughout, 1-3 mins. Transfer the shrimp to a bowl of ice water to cool. Drain and pat dry; set aside. In a large bowl, combine the sour cream, cayenne, the remaining lime juice and 1/2 tsp. salt. Add carrots, apple, and cilantro and toss to combine. Serve with the shrimp.
