Ingredients
- 1 tablespoon canola oil
- 1 head cauliflower (about 1 lb) -- trimmed, cut into 1" florets, stems peeled and cut into 1/2" thick slices
- 1 each gala apple -- peeled, cored and roughly chopped
- 1 medium onion -- peeled and roughly chopped
- 1 1/2 teaspoons curry powder
- salt and freshly ground pepper
- 1/4 cup non-fat yogurt (optional) or IMO sour
- cream substitute

Preparation
Step 1
Warm the canola oil in a medium saucepan over medium heat. Add onion and
cook briefly. Add curry powder, cauliflower, apple, onion and saute for 6
to 8 minutes. Add 1 cup water, cover and cook until tender, 12 to 15
minutes.
Put cauliflower, apple and onion into a food processor or blender and
puree until smooth, taking care not to overwork the mixture. If desired,
stir in the yogurt and season with salt and pepper.
