Chicken Jambalaya

Ingredients
- 4 large boneless chicken breasts cut into 2 inch chunks
- Salt & black pepper
- 1 T. olive oil
- 6-8 ounces chicken andouille sausage, cut into 1 inch slices
- 1 T. Adobo powder
- 1/4 t. chipotle chili powder
- 1-1/2 C. chopped yellow onions
- 1 C. chopped red bell pepper
- 4 cloves garlic, minced
- 1 C. reduced sodium chicken broth
- 2 bags Ready Rice, long grain & wild rice
- 1 can black beans, rinsed

Step 1
Season the chicken with salt & pepper. In a large non-stick pan over medium-high, heat the oil. Once hot add the chicken and brown on all sides for 2-3 minutes. Remove the chicken and add the sausage, browning for about 2 minutes, turning once.
Add the adobo and chili powder, cook for 30 seconds. Add onions and reduce heat to medium low. Caramelize until soft & browned, 6-8 minutes. Add peppers and garlic and cook until soft, about 2 minutes.
Add the browned chicken, broth, rice and black beans. Bring to a simmer. Simmer, uncovered, over medium to low heat for about 5 minutes or until the chicken is cooked through and the sauce thickens. Season with salt & pepper. Makes 4 servings as a main dish 6-7 as a side dish.
