- 1 box Funfetti cake mix, plus ingredients on back of box
- 1 small box sugar free/fat free vanilla instant pudding mix (just the dry mix!)
- Funfetti Cake-Batter Frosting (recipe & ingredients follow)

Preparation
Step 1
1. Preheat oven to 350 degrees. Line 2 muffin pans with 20-24 paper liners (amount may vary). Set aside.
2. In large bowl, prepare cake mix according to package directions. Stir in powdered pudding mix until incorporated. Portion dough evenly, filling cups about 2/3 full, and bake for approx. 15-18 minutes or until toothpick inserted in center comes out with light moist crumbs or clean. Cool completely and prepare frosting.
Funfetti Cake-Batter Frosting:
2/3 cup butter, softened
1 tsp vanilla extract
1/4 cup milk (if needed)
3/4 cup Funfetti cake mix (I used yellow and added sprinkles; either works)
3-4 cups powdered sugar
About 1/4 cup rainbow sprinkles or rainbow sugar (optional if you’re using Funfetti cake mix)
1. In bowl of stand mixer, beat together softened butter and vanilla extract until creamy, about 1 minute. Add about 1/4 cup of cake mix and beat in until incorporated. Gradually begin adding powdered sugar, about one cup at a time, until stiff frosting consistency is achieved. Thin out with little milk–about a teaspoon or two–at a time if needed.
2. Once you have nice stiff yet spreadable consistency, blend in rest of your cake mix until combined. Again, use milk if you must to thin it out if it’s too thick. Blend in your sprinkles.
3. Pipe frosting onto cooled cupcakes. Garnish with additional rainbow sprinkles, if desired. You can never have too many sprinkles!
