Ingredients
- 1 box white cake mix
- 3 egg whites
- 1/2 cup champagne
- 3/4 cup orange juice
- 1/3 cup oil
- 1 tsp orange extract
- Champagne-Orange Cream Cheese Frosting (recipe and ingredients follow)

Preparation
Step 1
1. Preheat oven to 350 degrees. Line 2 muffin tins with 24 paper liners and set aside.
2. In large bowl, beat together cake mix, egg whites, champagne, orange juice, oil and extract with mixer for about 2 minutes or until completely blended. Portion batter evenly (about 2/3 full) among muffin tins and bake for approx. 15-18 minutes or until toothpick inserted in center comes out clean. Allow to cool completely.
*Champagne-Orange Cream Cheese Frosting:*
1 pkg (8 oz) cream cheese, softened
1/4 cup butter, softened
2 tsp orange juice
2 tsp champagne
About 5 cups powdered sugar
1. In bowl of stand mixer, beat together cream cheese, butter, OJ and champagne until creamy and blended, about 2 minutes. Gradually add powdered sugar, about one cup at a time, until stiff but spreadable consistency is achieved. If desired, add more OJ or grated orange peel for more flavor intensity (the flavor here is kind of subtle).
2. Pipe frosting onto cooled cupcakes and garnish with festive sprinkles. For these, I used Duff Goldman Neutral sprinkles which I got for Christmas. I thought the pearl jimmies and gold and silver sugar was perfect for New Year’s!
The mimosa flavor in these cupcakes is kind of subtle, so if you prefer it stronger (read: boozier) play around with flavors of champagne in your cake batter before you bake it. Try increasing the champagne to 3/4 cup if desired.
