Created by Colin Field in 1982, this drink is "France in a glass," as it uses locally sourced ingredients. The cocktail was invented for the former head of a French TV channel and, over the years, has become the Hemingway Bar's most popular drink, making up around a third of the orders each night.

Ingredients
- 1 mint sprig
- 1 teaspoon sugar
- 2/3 ounce Calvados
- 1 3/4 ounces apple juice
- Champagne (to top)

Preparation
Step 1
Add mint, sugar and Calvados to glass and gently muddle.
Fill glass halfway with ice and add apple juice.
Top with Champagne and serve.
