Ingredients

  • 1 box white cake mix {plus ingredients: Buttermilk, Oil and 4 eggs}
  • 1 small box Watermelon flavored Jell-O
  • Mini Chocolate Chips {enough to sprinkle about 10 into each cupcake and for decoration}
  • 2-4 drops pink coloring
  • Pink Sparkling Sugar
  • Frosting
  • 1/2 cup butter
  • 3-4 cups powdered sugar
  • 1-2 tablespoon milk
  • 1 tablespoon vanilla
  • 2-4 drops pink coloring
  • Watermelon flavoring {optional}

Preparation

Step 1

Cupcakes

Preheat oven to 350 degrees and line muffin tin with cupcake liners.
Combine cake mix, Jell-O, buttermilk, oil, and eggs until well combined.
Stir in pink coloring a little at a time until you get the desired color.
Add a scoop {tablespoon or so} of batter to cupcake liner.
Sprinkle 5-6 mini chocolate chips.
Add another scoop of batter and more chips.
Top with a little more batter if you have room.
Bake for about 10-15 minutes or until a toothpick inserted comes out clean.

Frosting

Beat butter until fluffy.
Gradually add powdered sugar, alternating with milk and vanilla.
Beat until well combined.
Add pink coloring a little at time until desired color.
You can also add Watermelon flavoring, if you want. You can find it near the candy making supplies.
Fit a decorator bag with a Round #12 tip, fill bag with frosting and pipe onto cupcake.
Roll in Pink Sparkling Sugar and add mini chocolate chips for decoration.
