Ingredients
- 3 c chicken - boiled, de-boned breasts
- 2 c celery - finely chopped
- 2 T onions - finely chopped
- 1/4 c pimiento
- 1/2 c almonds
- Juice of 1 lemon
- 1/2 c mayonnaise
- 1 c cream of chicken soup - blend together
- 1 c grated cheddar-jack cheese

Preparation
Step 1
Saute celery and onions in 1 T of the mayo until tender.
Mix with chicken and sprinkle with lemon juice.
Let sit 15 minutes.
Blend together mayonnaise and soup and fold into the chicken mixture after the 15 minutes.
Top with pimiento.
Top with almonds and then cheese.
Bake at 350 for 30 min.
