Turkey Lemongrass Meatballs

Ingredients
- 1 lb ground turkey, I use ground turkey thighs
- 3/4 cup bread crumbs or panko
- 1 tablespoon minced garlic
- 2 tablespoons minced lemongrass
- 1 teaspoon (or more for spicier) minced Fresno chili
- 1/2 cup cilantro, minced
- 1/2 cup basil, minced
- 1 egg
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon safflower oil
- 1/2 cup water

Step 1
In a large mixing bowl combine all of the ingredients except the safflower oil and water. Using your hands mix well. Shape the mixture into small meatballs. In a large frying pan over medium low heat, heat the safflower oil. Add the meatballs and cook until golden brown; you may have to cook in batches. Turning with a pair of tongs to evenly brown each side; about 3 minutes per side. After all of the meatballs are cooked, return all of them to the frying pan. Gently pour in the water to loosen any pieces that have cooked onto the pan. Bring the heat up to medium, cover and gently cook until the water is evaporated, about 7 minutes. Serve. Eat.
