Ingredients

  • 2 lbs chicken breast
  • 1/2 c. chicken broth
  • 1 c. finely chopped onion
  • 2 garlic cloves, finely chopped
  • 1/2 tsp oregano
  • 3 Tb chili powder
  • 1/2 tsp cumin
  • 12 corn tortilla
  • 1/2 c. green onion, chopped (garnish)

Preparation

Step 1

Preheat oven 350.

Puree veggies, herbs and broth. Pour half into large baking dish with cover.

Dice chicken, arrange chicken in dish and cover with remaining puree.

**You can marinade over night at this point***

Bake covered for 30 mins, remove cover and bake another 45 mins. Make sure to bast occasionally.

Shred chicken and put back into sauce, mix well and bake an additional 15 mins.
