Basil Risotto

Ingredients
- 2 1/2 c. fresh packed basil
- 1/4 c. fresh sage
- 5 1/2 c. chicken broth
- 1/4 c. olive oil
- 1/2 c. dry white wine
- 1/2 c. grated Parmasan cheese
- 2 med finely diced onion
- 1 1/2 c. Arborio rice

Preparation
Step 1
In food processor mince basil, sage, and cheese.
In sauce pan bring broth to simmer and keep at bare simmer.
In seperate pan cook onions, in 1/4 c. olive oil, until soft but not browned. Add rice
Cook uncovered for 10 mins, stirring constantly. Increase heat to medium and add wine, cook until wine is absorbed. Stir constantly.
Add one cup of broth at at time, stirring constantly until absorbed. Rice will be tender and creamy looking after about 18 mins.
Take off heat and stir in herb mixture & remaining oil.
