Ingredients

  • 3 c. all-purpose flour
  • 1 c. sugar
  • 1-1/2 t. baking soda
  • 1/2 t. salt
  • 3/4 c. butter, diced
  • 1-3/4 c. milk
  • 16-oz. can peaches, drained and chopped

Preparation

Step 1

Mix flour, sugar, baking soda and salt in a large bowl. Cut in butter with a pastry blender or fork until crumbly. Add milk and peaches; stir just until moistened. Fill greased or paper-lined muffin cups 2/3 full. Spoon Topping onto muffins.

Bake at 400 degrees for about 20 minutes, until golden and a toothpick inserted in the center comes out clean. Turn out and cool slightly on a wire rack; serve warm or cold.

Makes 2 dozen.

Topping:

4 T. butter, diced
4 T. sugar
1 t. cinnamon

Mix all ingredients together with a pastry blender or fork in a small bowl until crumbly.
