Strawberry Rhubarb Baked Oatmeal

Ingredients

  • 2 C diced rhubarb
  • 3 C diced strawberries
  • 2 eggs
  • 1/4 C applesauce
  • 1/4 C oil
  • 1/2 C sugar
  • 1 1/2 C milk
  • 3 C oats
  • 1/2 C whole wheat flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 - 1/2 C brown sugar, for sprinkling

Preparation

Step 1

Preheat oven to 350°. Grease a 9x13 baking dish.
Toss the rhubarb & strawberries in baking dish.
In a mixing bowl, whisk together the remaining ingredients, except the brown sugar. Pour the batter over top of the fruit & stir gently to combine the fruit.
Sprinkle the brown sugar on top.
Bake 25-30 minutes, or until toothpick comes out clean in the middle.

*Serve with milk, cream, yogurt, etc.
