Ingredients

  • 3 cups finely chopped tomato
  • 1 cup finely chopped cucumber
  • 1/2 cup finely chopped red onion
  • 1/2 cup finely chopped yellow sweet pepper
  • 1/4 cup snipped fresh cilantro
  • 1 tablespoon red wine vinegar
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 - 2 small fresh serrano peppers, seeded and finely chopped*
  • 2 cloves garlic, minced

Preparation

Step 1

In a large bowl combine tomato, cucumber, red onion, sweet pepper, cilantro, red wine vinegar, oil, salt, sugar, serrano peppers, and garlic.

Cover and chill for at least 1 hour. Divide tomato mixture among 4 half-pint glass jars. Seal;

Store in the refrigerator for up to 2 days.
