Ingredients
- 3 cups finely chopped tomato
- 1 cup finely chopped cucumber
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped yellow sweet pepper
- 1/4 cup snipped fresh cilantro
- 1 tablespoon red wine vinegar
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1 - 2 small fresh serrano peppers, seeded and finely chopped*
- 2 cloves garlic, minced

Step 1
In a large bowl combine tomato, cucumber, red onion, sweet pepper, cilantro, red wine vinegar, oil, salt, sugar, serrano peppers, and garlic.
Cover and chill for at least 1 hour. Divide tomato mixture among 4 half-pint glass jars. Seal;
Store in the refrigerator for up to 2 days.
