Ingredients

  • 2 1/4 cups unbleached ap flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 tsp ground cinnamon
  • 1 tsp freshly ground nutmeg
  • 1 tsp ground cardamom
  • 1 cup sugar
  • 1 1/4 cup packed dark brown sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 1/4 cup coconut oil
  • 3 3/4 cups rolled oats
  • 1 cup raisins
  • 1 1/2 c. powdered sugar
  • 1/2 teaspoon cinnamon
  • 1/2 tsp. vanilla bean paste

Step 1

Preheat oven to 350F. Grease well a half sheet baking pan or spray with bakers release. Whisk together flour, baking soda, salt and spices in a large bowl. Cream together sugars, vanilla, eggs and coconut oil until smooth. Stir in flour mixture just until combined. Mix in oats and raisins until they are evenly distributed. Spread dough in prepared pan into a even layer with a spatula or with a sheet of wax paper patting with down until spread evenly your fingers. Bake for 25-30 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. While still prepare the cinnamon vanilla glaze by mixing powdered sugar, cinnamon, vanilla bean paste and enough hot water to make it a thick drizzling consistency and glaze bars. Cool pan on a wire rack before slicing.
