Ingredients
- 1-1/2 tablespoon coarse mustard
- 1 clove garlic, minced
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon pepper
- 1 pork tenderloin
- 1/4 cup low-sugar orange marmalade, divided
- Cooking spray
- 1/2 cup water
- 1/4 cup chicken broth

Step 1
Combine first 4 ingredients, set aside. Slice tenderloin lengthwise, cutting almost to, but not through, outer edge. Spread mustard mixture in pocket, press gently to close. Tie tenderloin securely with string at 2" intervals. Spread 2 tablespoons orange marmalade over tenderloin. Place tenderloin on rack coated with cooking spray. Place rack in broiler pan, add water to pan. Bake at 325 degrees for 40-45 minutes., Cook remaining 2 tablespoons orange marmalade and chicken broth 2-3 minutes until thickened. Slice tenderloin, spoon sauce over slices.
