Perogies

Great recipe as written but filling pockets with fresh summer fruit like blueberries, apricots, peaches, plums and cherries was a family favourite when I was a child. I liked them boiled then fried until golden and sprinkled with sugar but Mom and Dad liked theirs with sour cream and sugar.

Ingredients
- DOUGH:
- 1 egg
- 1/2 cup oil
- 1/2 cup water
- 2 cups flour
- Pinch of salt
- 1/2 tsp baking powder
- FILLING:
- 2 cups boiled potatoes
- 3/4 container cottage cheese
- salt and pepper to taste

Step 1
Place the egg in a measuring cup. Add enough oil to measure 1/2 cup. Add the water, flour, salt and baking powder. Let dough stand a while covered before mixing. When dough is formed, roll out flat to 1/8" thickness and cut out cirlces with a glass. Roll circles out thinner and and spoon filling into the center. Pinch the edges of the pyrogies shut. Freeze on a cookie sheet and put in baggies for the freezer.
