Linzer Augen ( Jam filled Butter Rings)

Ingredients
- 2 cups all purpose flour
- 3/4 cup plus 2 tablespooons confectioner's sugar, plus additional for sprinkling
- 1 tsp freshly grated lemon zest
- Pinch of Salt
- 3/4 cup (1 1/2 sticks) plus 2 tablespoons unsalted butter, cut into cubes
- 3 large egg yolks
- 1 tsp vanilla extract
- 2/3 cup seedless raspberry or apricot jam

Step 1
1. Place flour, confectioner's sugar,lemon zest and salt in a bowl of an electric mix master and stir to combine. Add the butter and beat till smooth, scraping down the sides of the bowl with a rubber spatula as needed.Add the egg yolks and vanilla and beat till just combined. Wrap the dough in plastic wrap and refrigerate for 30 minutes or as long as 3 days.
2. Preheat oven to 350. Line cookie sheets with parchment paper
3. Divide the dough in half. working with one piece at a time, roll the dough out on a lightly floured surface to 1/8 thickness. Using a 2 1/2 round or fluted cookie cutter. Cut out rounds of dough. Use a 1 inch cookie cutter, cut rounds from middle of half the cookies. Place cookies 1 1/2 inches apart on cookie sheet and Bake till light brown about 8-12 minutes depending on the oven. Transfer cookies to wire rack to cool after cooling first on cookie sheet
4. When cookies are cool, sift confectioner's sugar over the ring shaped cookies. Drop tsp of jam in the center of each round cookie. Place ring over the jam, the filling should peek out the hole.
5. Sore in container with waxed paper between each layer
