Ingredients

  • Filling:
  • Must prepare partially ahead
  • 1 6 oz. package semi-sweet chocolate chips
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tsp. instant coffee
  • 1 tbsp. brandy
  • dash of salt
  • 1 tbsp. butter
  • 2/3 cup light cream, scalded
  • Topping:
  • 1 cup heavy cream
  • 4 tbsp. confectioners sugar
  • shaved chocolate

Preparation

Step 1

Melt chocolate chips in top of double boiler or in microwave on low power. Add egg, vanilla, coffee, brandy, salt and butter. Pour into a blender. Blend on high, pouring in hot cream in steady stream. Blend 1 minute. Pour into dessert glasses, custard cups or pots de creme. chill 3 hours or until set.

Just before serving, whip cream with confectioners' sugar. Top each pot with whipped cream and chocolate shavings.
