Garlic and Soy Roasted Potatoes with Scallions

- 2 pounds red potatoes or white, small size
- 1 1/2 tablespoons peanut oil or other vegetable oil
- 1/2 tablespoon sesame oil
- 1 1/2 tablespoons soy sauce or to taste
- 1/2 teaspoon black pepper freshly ground, or to taste
- 4 cloves garlic minced
- 1/2 cup scallions, spring or green onions sliced
- 1/4 cup cilantro freshly chopped

Directions
Preheat the oven to 425 degrees F.
Half or quarter the potatoes and add in a big bowl with the vegetable oil, sesame oil, soy sauce, pepper, and garlic, toss until the potatoes are well and evenly coated.
Transfer the potatoes to a baking sheet and spread out evenly into 1 layer.
Roast for about 45 minutes or until browned and crisp.
Turn twice during baking.
Remove from the oven and transfer to the same low.
Toss with scallions and cilantro. Season with more soy sauce if needed.
Serve warm or cold.
