1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
2. Using a mandoline or knife, cut the plantains crosswise into 1/16-inch-thick rounds. Transfer to a medium bowl and drizzle with olive oil, toss to coat. Season with salt, and spread the slices in a single later on the prepared baking sheet.
3. Transfer plantains to the oven and bake until they're crisp and lightly browned, for 18-20 minutes. Sprinkle with more salt, if desired.
