Ingredients

  • 1 cup basmati rice, rinsed
  • 1/4 cup red lentils, rinsed
  • 1 bay leaf
  • 6 cardamom pods, split
  • 1 teaspoon ground turmeric
  • 6 whole cloves
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick, broken
  • 1 onion, chopped
  • 8 oz cauliflower, in small florets
  • 1 large carrot, diced
  • 1 cup frozen peas
  • 1/3 cup golden raisins
  • 2 1/2 cups vegetable broth
  • salt & pepper
  • nan bread (optional for serving)

Preparation

Step 1

Place rice, lentils, bay leaf, spices, onion, cauliflower, carrot, peas, & raisins in a large pan. Season with salt & pepper to taste, mix until well combined.

Pour in the broth and bring to boil. Reduce heat, cover, and simmer for 15 minutes stirring occasionally until rice is tender. Remove from heat and set aside, covered for 10 minutes so broth is absorbed. Remove bay leaf, cardamon pods, cloves, and cinnamon stick & discard.

Serve warm rice with curry of our choice or nan bread (my fav).
