Smokey Bacon Chicken Thighs (Paleo)

Ingredients
- Spice Blend:
- 16 Chicken Thighs (skin removed)
- 16 slices Bacon
- 1 Tbsp Chipotle Powder, or to taste
- 1 Tbsp Smoked Paprika
- 1 Tbsp + 1/2 tsp Onion Powder
- 1/2 tbsp Cinnamon
- 1 Tbsp Smoked Sea Salt
- 1/2 Tbsp Fresh Ground Black Pepper
- 1/2 tsp Cumin
- 1/2 tsp Garlic Powder

Preparation
Step 1
1. Preheat oven to 375F.
2. Line a rimmed baking sheet with foil and place a metal rack on it (like a cooling rack)--optional.
3. Combine Spice Blend ingredients. You will only use about half for this recipe. Set aside.
4. Remove skin, rinse the chicken thighs and pat dry.
5. Coat the chicken on all sides with the spice blend.(**or for less spicy option: sprinkle with Paprika,Salt & Papper.)
6. Wrap slice of bacon tightly around each seasoned chicken thigh. Try to keep the ends on the bottom of the thighs.
7. Place bacon-wrapped thighs on the metal rack on the baking sheet. Bake in the preheated oven for 35-40 minutes, or until an internal temperature of 165F is reached.
8. Serve hot with some Roasted Veggies.
