Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 3/4 cup butter -- softened
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups apples (about 3 Fuji apples) -- peeled & finely chopped
  • 1 cup walnuts -- chopped

Preparation

Step 1

Preheat oven to 350 degrees.

Grease and flour a 9 x 13 glass pan and set aside.

Sift the flour, baking soda, salt and cinnamon together and set aside.

In a large mixing bowl, cream the butter and sugar together. Add the eggs
and vanilla extract and mix well. Add the flour mixture and mix just until
blended. Put in the apples and walnuts and stir until distributed evenly.
This batter will be very stiff.

Spoon into the baking pan and bake for 40-50 minutes or until a toothpick
inserted in the center comes out clean.
